The rice varieties for sake brewing, “Yamada Nishiki,” have begun to ripen! (Mid-September)
The sake rice “Yamada Nishiki” used in our “Hatsujin Junmai Daiginjo” and “Hatsujin Junmai Ginjo Yamada Nishiki” is
grown by farmers in Tsuwano.
The area is called “Okugano Village,” and is at a higher elevation than our brewery.
Tsuwano is rich in nature, but “Okugano Village” is located further upstream, so it’s blessed with even cleaner water.
The fertile soil, clean water, and climate with extreme temperature differences are all essential conditions for producing delicious rice.
We asked Mr. K, a brewer at Hatsujin, to take a photo of the current rice.

The rice has ears and is growing well.
This is a blessing thanks to the hard work and dedication of the rice growers °˖✧˖°.
The rice harvest will probably begin in October.
